Mother-of-two reveals her incredibly organised fridge

A mother-of-two who lost 20 kilos without exercising has shared the contents of her extremely well organised fridge and the produce she buys to stay fit and healthy.

Simone Harbinson, who is based in Victoria, has been prepping 30-50 fresh meals on Sunday afternoon for the past five years.

In her latest Instagram snap, the 33-year-old revealed the interior of her fridge, which included sweet potato brownies, bruschetta mix, lentil bolognese and garlic mushrooms.

She also showcased her homemade granola, white and black rice to be used for stir fries, sliced watermelon and boiled eggs.

It takes Mrs Harbinson just two to three hours to prepare berry-based breakfast smoothies, chicken curries and pasta, as well as chopped vegetables for her children to eat with dips as a mid-week snack.

She spends $250-$300 a week feeding her family of four, as well as three pets, and tries her best to eat the food around a schedule, so she doesn’t have to freeze them all.

‘My daughter is vegetarian so we tend to have a meat-free dinner once or twice a week also which will generally be a veggie burger or a lentil and vegetable lasagna,’ she told FEMAIL previously.

‘I always have homemade granola, banana bread and protein balls on the prep list each week too. They always help when we are looking for a sweet treat.’

Five years ago, Mrs Harbinson’s weight loss journey made national headlines because she managed to drop 20 kilos without exercising – something many couldn’t believe was possible.

She was originally forced to stop her rigorous exercise routine after being left bedridden with a rare appendix cancer.

It was here she started meal prepping to get her diet plan back on track and stay accountable without daily workouts.

Since then she has now been given clearance to workout in a gym and she follows The Bod based training program.

But that doesn’t mean she slackens off in the kitchen. 

‘I basically turn my fridge into a healthy fast food restaurant. If you always have healthy meals on hand, you’re always going to eat well,’ she said.

‘And the kids cant complain “Mum, there’s nothing to eat!” Planning ahead and working from lists, ticking things off as they’re done always makes me feel accomplished.’

On an average day the busy mother will eat a mango smoothie for breakfast, hommus with carrot sticks for a mid-morning snack and spicy chicken with avocado on a wrap for lunch.

By the afternoon she’ll snack on a protein bar, almonds and a green apple and tandoori chicken with three seed rice salad for dinner. 

Chobani’s yoghurt tubs are a guilt-free dessert she enjoys.

‘If three of your recipes require onion, chop all three onions in one go then split off into each recipe.

‘Have a sink full of hot soapy water and wash dishes as you use them. Don’t let them build up over your prep to then be stuck with a total mess to clean.

‘Buy stackable containers for the fridge and freezer so you don’t run out of space.’
