MasterChef star Khanh Ong reveals his secret to making the ‘perfect chewy chocolate chip cookie’

He’s the MastcherChef fan favourite who was eliminated from Back To Win after his quail dish left the judges unimpressed last month.

But now Khanh Ong is back with his own YouTube cooking channel, So Let’s Cook.

The 27-year-old was joined by his sister Amy on Monday, to share the secrets behind his family’s favourite chocolate chip cookie recipe.

 ‘I don’t really bake so I thought I’d actually get someone who enjoys baking a lot more then I do,’ he said while introducing Amy.

‘Amy makes the best cookies, they are chewy in the middle and crunchy on the outside,’ he added.

Amy began by mixing three types of sugar- brown, white and natural.

‘That’s in there for the crunch, raw sugar doesn’t break down like other sugars, it stays in crunchy granules,’ Khanh explained.

After adding half a cup of melted butter, Amy mixed it together, revealing you only need to do it for as long as you can see large lumps.

‘As it cooks it will melt and all incorporate together anyway,’ Khanh explained.

After adding egg, vanilla bean paste and flour, Khanh sets about chopping up a block of dark cooking chocolate.

‘It’s ok to be rough, we want them to all be different sizes anyway,’ he added.

Once it was time to get them ready on the tray, Khan revealed one of his professional tricks of the trade.

‘Put a little bit of batter onto the baking tray to help that stick. It’ll stop the paper moving and changing the shape of the cookie,’ he explained.

Khanh then revealed his secret to making perfectly-sized even cookies – he measures the dough using an ice-cream scoop.

‘If you have any extra just add it to the balls if you don’t want to get out another tray. Or do what I do and just eat the raw dough,’ he laughed.

Khanh explained all they need is 13-minutes in the oven to be ‘perfect’.

‘At 13 minutes they are still chewy but the outside is hard,’ he says, adding if you don’t like the chewy texture it’s ok to leave them in for another minute or two,’ he said.

Khanh Ong’s favourite chocolate chip cookies

Ingredients makes 14 cookies 

1/4 cup of white sugar

3/4 cup of brown sugar

2 tablespoons raw sugar 

1 teaspoon of salt 

1/2 cup of melted unsalted butter   

1 and 1/2 cups of flour 

1/2 teaspoon of baking powder 

1 teaspoon of vanilla bean paste 

1 egg

1 block of dark cooking chocolate  

METHOD

1. Preheat oven to 180 degrees

2.  Combine all three types of sugar in a large mixing bowl with salt and stir until well combined 

 3. Add melted butter and whisk until their are no visible lumps 

4. Add egg and vanilla paste to wet ingredients and whisk until combined  

4. Pour flour and baking powder into a sifter and place into a second mixing bowl  

5. Pour wet ingredients into the bowl of flour and stir to fold together 

6. Once combined measure out individual cookie portions using an ice cream scoop and place onto a baking tray lined with baking paper

7. Bake for 13 minutes to leave cookie slightly chewy in the centre.
