‘This time with a filling of steamed, mashed half and half sweet potato, pecorino, nutmeg, salt and pepper, sage, lemon and beurre noisette sauce and pure semolina dough’.

She added: ‘I hand rolled the pasta this time and the slightly thicker result made for a springier mouthfeel which I feel is nicer contrast with the potatoes.’

‘I cut shrank into oval shapes which when crimped across the longer length, created a rounder, stouter shaped dumpling which I also prefer.’

Poh went on to say that Justine also made an ‘incredibly delicious onion tart of puff pastry, lightly caramelised onions with bechamel and stew of squid a l’americaine’.
