Mum reveals her genius ‘breakfast sub’ meal prep tactic – and it saves her hours of time in the kitchen each week

An Australian mum has revealed the simple way she prepares breakfast ‘subs’ to save time on weekday mornings. 

Christina, a Sydney mum, fills each crusty roll with boiled eggs, cheese, ham and spinach.

But on Facebook she revealed she cooked the eggs in her Kmart pie maker rather than in a pot of water on the stove. 

She said the tasty meals last four days in the fridge when wrapped securely with GladWrap – but could alternatively be placed in air-tight containers. 

Mum Christina shared an image of the eight delicious subs she made filled with boiled eggs, cheese, ham and spinach, which looked identical to popular options from Subway

‘We usually microwave them in the mornings to melt the cheese,’ Christina wrote.

The sandwiches would be perfect for those who start work in the early hours of the morning and would keep you full until lunchtime.

Each sub wouldn’t cost much to make and is a cheaper alternative to buying breakfast.

After posting the image online other parents praised Christina for sharing the meal prep recommendation. 

‘This is a great idea, will have to do some up this weekend for hubby’s lunches,’ one woman wrote.

‘Love this! They look delish, great job,’ another said, a third added: ‘Had to look twice, thought it was Subway.’

Earlier this year in February an organised mum-of-two took meal prepping to the extreme and prepared an entire term’s worth of school lunches for her children for only $75.

Rachael Hallett, who runs the Mums Who Budget & Save Facebook group, shared images of her impressive cook up with thousands online.

The meal prep included sandwiches, sausage rolls, meatballs, miniature pizzas, sliders and pinwheels, which are all to be stored in the freezer until needed.

Rachael, from Victoria, said she made a total of 250 meals for the lunch boxes.
